This is a full-bodied biodynamic classic red wine blend from Wallington in Cowra. The Cabernet Sauvignon and Cabernet Franc compliment each other perfectly. Savoury red fruit with earthy undertones and hints of Campari. A lingering finish, it is rich and robust. The grapes were hand picked then allowed to naturally ferment in open vats with hand plunging. After basket pressing the wine was matured in a variety of French and American oak barrels for 2 years before blending and bottling. Enjoy with balsamic mushrooms on sourdough with chorizo and parsley. Drink now or will reward careful cellaring for up to 10 years.
